Old Calypso space has been transformed – Now Hudson at Waterway East

Surfacing this season, the historic Old Calypso space will be transformed entirely into an exciting new waterfront eatery and bar overlooking the spectacular Intracoastal Waterway (just across from Deck 84) in downtown Delray Beach with the arrival of Hudson at Waterway East. With a passionate motto of “Love Thy Craft,” this casually hip and trendy venue will feature unique spaces, including alluring nooks for dining and socializing, and an expansive covered deck, amid 7,000-square-feet of waterfront bliss. Serving urban comfort food and a modern beverage program in a cool new enclave, Hudson—opened by partners Sam Bonasso, Joe McCullough and Rita Wilson— seeks to be a new generation of waterfront escape that offers something for everybody. “We’ve really designed Hudson to take full advantage of our waterfront location, with the spacious deck and great views of the water and passing boats from every seat,” says Owner/ Operator Sam Bonasso. “Our cuisine and beverages were created to be fun and dynamic, all to complement that on-the-water experience.” Hudson has been designed by Pam Manhas of Manhas Design and will feature an eclectic, vintage-inspired aesthetic, comprising plenty of woods, tile work and brick. The open floor plan will provide a variety of indoor and outdoor seating areas— including booths, high-top tables, elevated seating and bar seating—all of which offer great water views from every angle. Special features include a pizza oven and an exposed glass-front keg cooler. There is something exciting for everyone on the urban comfort food menu, helmed by Executive Chef George Cocilova, available for lunch and dinner seven days a week. With a focus on local producers and fresh ingredients, offerings will range from soups, salads and shareable starters to sandwiches and entrees. Signature highlights to include Alaskan Halibut, Lobster Potato Skins, Roasted Tomato Bisque with Truffled Grilled Cheese, Pork Porterhouse and New England Style Gulf Shrimp. The beverage program at Hudson is focused on small-producer beers, spirits and wine. Modern renditions of classic cocktails, barrel-aged spirits and handcrafted cordials are some highlights of Hudson’s beverage program. “We take pride in providing our guests a remarkable experience. Service, product quality, consistency, lively atmosphere and value are part of our culture and commitment to guests,” says Vicente Lavayen, assistant general manager. “Our team looks forward to connecting with the local community through special events and promotions at Hudson.” Hudson will offer valet parking, late-night dining, a children’s menu and daily Happy Hour from 4-7 p.m. Reservations accepted. Hudson at Waterway East is located at 900 E. Atlantic Ave., #22, Delray Beach. Hudson is open at 11 a.m. seven days a week; bar open late.
