By Olivia Aponte South Tech Student (10th Grade) On March 3rd 2013 an event celebrating children took place at the Woman’s Club of Boynton Beach. The theme of the celebration was Pineapple! A few aspiring chefs from the culinary program at South Tech Academy, including me, were happy to volunteer in the kitchen assisting Chef Phil, Chef Bonnie and Chef Chrissy in creating exquisite and unique dishes. We helped prepare grilled pineapple with corn tortillas, grass fed hamburger sliders with caramelized onions and gorgonzola cheese, pineapple cupcakes with coconut cream icing, spaghetti squash with marinara sauce and a pineapple fruit salad with fresh lettuce, oranges, beets, scallions, apples and, of course pineapple, topped off with a sweet and savory raspberry dressing. It was an amazing opportunity to work hand in hand with professional and successful chefs, preparing fun dishes. It was also a delightful experience to serve all the guests eager to try these exciting dishes, working with fellow students, getting the job done, and having fun while doing it! Pineapple is an amazing fruit to work with, whether you’re making breakfast, entrees or desserts. Do not limit yourself to a basic fruit salad! Try something different such as a sweet pineapple fritter or a more complex and flavorful dish, such as chicken with grilled pineapple.
